I obviously understood that there are many things I could never prepare for but when pregnant with Caspian I still believed I had a pretty good idea of what to expect. I didn’t. One of the things I laughed at was the hype of batch-cooking & freezing meals pre-birth and then simply heat up post birth. My mind was all like.. ’pre-frozen and re-heated meals when you need as fresh & nutrient-dense meals as you possibly can?!’ It made NO sense whatsoever. Until.. I was in the actual situation. When I sat there, totally blissed out/crazy overwhelmed/soar & tired with Caspian in my arms it finally it dawned on me. There are moments in your life when even the easiest of household tasks seem both wildly unnecessary, irrationally huge and impossible to get through.

Sure, I was prepared for many things but the 24/7-hunger paired with the fact that I obviously needed to channel my energy into other things then cook? We did not have that whole thing sorted pre-birth. The kitchen is my happy place, surely giving birth wouldn’t change that for more then 2 or 3 days? Yeah right. The fact is that no one who just gave birth ought to get up and do anything even remotely linked to household duties or chores (unless you feel a sudden urge to layer your daybed with another cosy hippie fabric or blanket – go for it!) cocooning with your babe(s) is where it’s at.

Needless to say I look forward to being tad more prepared this time around. We will most likely mess up some things but at least I know this; our freezer will be stocked with yummy good-for-us meals to gently heat up. This one right here is not going to give a damn about meal-planning or grocery shopping. And because I like to think that I’ve learned some important things during these two years as a parent, I WILL ASK FOR HELP. To turn this postpartum into a far more smooth and gentle time we’ll ask friends and family to bring a meal over, fold some laundry, come play with Caspian, vacuum or whatever they can. Store bought vs homemade vegetable stock / bullion powder

When I entered the whole foodie internet-scene way back I noted with surprise the widespread use of stock in recipes all over. Why was I surprised? Well guess what?! In Sweden we mostly use plain high quality water as a base.. Gasp! The original idea with stock/broth is to use scraps and leftovers to make a delicious water-based flavor sensation to cook with and drink/eat as it is. Totally genius! But when (honestly) most of us trot to the supermarket to get those liters of stock I have to wonder, haven’t we missed something? I’ve never bought ready-made stock but I very well might have if it were something that even existed here (but that would be prior to knowing what was actually in it, see below). Cooking without stock has taught me to rely on the basic ingredients themselves + the addition of a few natural flavor enhancers such as good salt, tamari, nutritional yeast and truly fresh spices and herbs. All in the pursuit of that broad, savory, umami-like result that we all know, love and crave. No MSG needed! Where does this lead me? Well today I’ve created a 100% good for you Vegetable Stock Powder packed with all those flavor heroes I’ve worked with myself over the years. I’m very well aware that stock powders / bouillon cubes aren’t a new thing but you guys, this recipe right here has NO added funky stuff, low quality oils or hidden agendas. This is all good, supercharged and totally revolutionary. This Mighty Veggie Stock Powder will without a doubt save many a tired weeknight meals with just the flick of a wand (aka some hot water + basic ingredients). Plus it’s way easier on the wallet than the supermarket version. See, if we take that trot to the health food store or supermarket and come home with ready-made stock, chances are you’re also coming home with a whole bunch of not too high vibe things hidden in that tasty liquid.

Low Quality Salts  There is a widespread use of low quality salts (which are cheap) and result in sodium crazed cooking bases that in my culinary mind don’t enhance anything but rather drown your whole food ingredients instead of letting them show their own flavorful brilliance [Read my guide on salts and the importance of good quality salts HERE]. 

Sugar Yup, that’s right. Sugar often finds it’s way into store-bought stock. It comes in many forms but it’s still sugar. High fructose corn syrup, fructose, cane sugar, concentrated fruit juices etc.

Gluten Something worth noting when it comes to ready-made stock or store-bought bullion powder/cubes is that there very well may be gluten in them. If you are sensitive to gluten or wish to avoid it, this can be good to know.

Artificial colors / preservatives Known hormone disruptors and all around unatrural and highly processed chemicals in our food just for the sake of color and shelf-life longer than yourself? No thanks. [Read up on Artificial colors in food HERE]

Yeast / Yeast Extract / MSG Chances are very high that the liter of flavor you bought also has yeast or yeast extract listed on the backside. Yeast extract is made by highly processing yeasted products and can be found in everything from pretzels, stock, bread, cookies and canned soups. Yeast extract is actually just a form of concentrated MSG (monosodium glutamate) and MSG is linked to obesity (it’s actually what laboratory mice are being fed if such a state is required). Ever since people have been on the lookout for MSG in their foods this ingredient/desired effect is often hidden behind.. you guessed it! Yeast extract! [Read my Fun & Fabulous Facts-section on msg HERE]. This is all completely bananas. Do we want to go to those lengths to enhance flavor? I think not. By now you might be wondering why on earth I put ’nutritional yeast’ in the list of ingredients? Good news: nutritional yeast is something else completely and it’s actually really good for you. Loaded with b-vitamins (even B12!), protein, fiber and minerals. Just make sure you are purchasing real nutritional yeast and not brewers yeast which is in fact just an empty by-product from the brewing industry.

Go Organic Being an organic gardener with an overall interest in what goes on in the world I want to finish this text off by mentioning that We Are Changing The World With Every Choice and Purchase. What is really in those cheap pre-packaged stocks/powders? Cheap oil is the result of vast deforestation and unstable monocultures. Cheap spices and herbs is only a possibility because of horrible working conditions and an overuse of cheap chemicals instead of a strong and kind agricultural system. Mighty Veggie Stock Powder

Makes roughly 1.5 cup powder
1 tsp powder paired with 1 cup water makes 1 cup delicious + healthy stock. Use less if you are only looking to add a little extra flavor to an already flavorful stew, soup, meal. A sprinkling when cooking savory grains, making pesto, dips, sauces, soups, stews is terrific.

3/4 cup Nutritional Yeast (not brewers yeast)
1/4 cup brown rice flour
3.5 tbsp himalayan pink salt
1 tbsp dried thyme
2 tsp garlic powder
2 tsp sweet paprika powder
1 tsp dried oregano
1 tsp mustard powder
1 tsp turmeric
1 tsp ground black pepper

  1. Combine all ingredients in a bowl, mix thoroughly and store in an air-tight glass container in the fridge.

Nourishing Soul Soup

The seriously delicious stock made with the Mighty Veggie Stock Powder can easily be turned into a comforting and nourishing soup by either cooking it on the stove in a pot with fresh vegetables + noodles or pouring it hot over the same layered veggies + kelp noodles in a glass jar (as pictured below). I like to prepare a few glass jars of noodles and vegetables and store in the fridge. When I need that quick meal I simply pour the hot stock into the jar and let it sit, lid on for 5 minutes.

1 serving
2 cups water
2 tsp Powerful Veggie Stock Powder
1/2 cup fresh kelp noodles or your noodles of choice
1 handful cauliflower florets
1/3 cup peas (or other cooked beans)
1/3 cup sauerkraut or other fermented vegetables
1 medium sized carrot, cut in matchsticks
1/4 sweet potato, cut in matchsticks
1/2 handful fresh parsley leaves
1 tsp fresh ginger, peeled & grated

1. Prepare all ingredients for the soup and rinse the kelp noodles.
2. Bring 2 cups water to a boil and add 2 tsp Powerful Veggie Stock Powder. Stir until dissolved.
3. Add the hot stock to EITHER the pot of vegetables + kelp noodles on the stove and let cook on low heat for 2-4 minutes OR pour the stock over your glass jar layered vegetables. If your are doing the jar method then put the lid onto the jar and let sit for 5 minutes prior to eating. Enjoy with a dollop of raw, vegan or dairy based sour cream/ yoghurt/other – a true Soul Soup, friends!
