Imagine my utter confusion when I realized I didn’t feel like chocolate. But that wasn’t all. I was actually rather repelled by the mere thought of eating chocolate. What the heck was going on in this crazy world? I was pregnant..

In my backpack I have 9 months of looking at Fabian like he was a crazy person whenever he suggested we make or buy anything chocolate (hello, have you ever met salt liquorice, frozen berries and lemons?!). Even if it was a good break I was still quite happy to find out that as soon as I had given birth to Caspian chocolate began to sound appealing again. Ever since, I’ve in my mind been creating a freaking amazing bar of chocolate to celebrate having it back in my life. Now it has come alive.

This is a tribute to the sacred cacao tree. May you always be loved, grown with care and devoured with all senses and then some. May you keep lifting peoples spirits, may you be savored in that melt-on-your-tounge meditative way and may you be be the center of many more cacao ceremonies around the globe. May the pure essence of you lead to thousands of aha-moments so that the pure essenses of our souls can surface. Yes chocolate can do that if you let it.

There is something explosively wild about pure, raw chocolate that reminds of something I’ve had my thoughs on this past week. Full moon and all. Only side by side with wild souls will the world expand. Wild souls that unapologetically follows and expresses their heart. Be a wild soul. Be you. Fun & Fabulous Facts

I’m sure you’ve heard that the botanic name for the cacao tree is ‘Theobroma cacao’ which literally means food of the gods. Not that we need that to confirm what a gift chocolate really is, eh? Anyhow, it’s a beautiful little reminder that chocolate is so not joking around, it’s seriously bad-ass and super high vibe. Chocolate is medicine. Oh and just to be clear, we’re talking the real deal here. We’re talking the as-close-to-it’s-natural-state-as-possible-chocolate. Organic and filled to the brim with ka-pow nutrients and medicinal benefits. Translation please? Raw cacao beans/nibs/powder is where it’s all at (nope, not cocoa powder or a Marabou milk chocolate bar). Chocolate has been labeled as a superfood this past decade and rightly so. Did you know that the load of antioxidants that raw chocolate beans carry tops even the world famous goji berries, green tea and blueberries? So if you want to strengthen and support you health (antioxidants absorb free radicals that cause cell and tissue damage = no, thank you) I invite you to rethink chocolate. From secret indulgence to sacred medicine. It’s not only the antioxidants that saves the day in chocolate land. Ever wondered why you feel oh.so.relaxed but at the same time elevated and happy when you eat chocolate? Raw chocolate is one of the best sources of magnesium found in nature and as magnesium is such a calming, stress-relieving and muscle-relaxing mineral, no wonder we feel fantastic when sitting down for a piece of chocolate (not to mention the fact that you stopped, sat down and focused on only one thing! Hallelujah!). Chocolate releases the brain chemicals responsible for feeling in love due to it’s theobromine contents and chocolate is also considered an aphrodisiac.

Re-launching chocolate as sunshine, (natural) lollipops and roses is very tempting and I assure you, it’s definitely a reachable truth, there are just a few things we need to have in mind to keep the chocolate-y world all good. Always, without an exception buy high quality organic and fairly traded chocolate. Pestisides, herbicides and the whole list of scary chemicals are generously used in cacao plantations and we do not want those either on our earth, in our body or in the body’s of the people growing/harvesting the beans. Speaking of, the working terms of chocolate plantation workers are generally terrible. There is much child labor in conventional cacao plantations to keep prices low and the things I’ve read and seen on this makes me so sick. What is chocolate worth? If you buy cheap chocolate candy/bars/chips/baked goods/powder then know that you are also feeding child (and also adult) slavery. There is no way around that fact. Go Organic for the love of the earth and go Fair Trade for the love of our sisters and brothers. We have the power to vote with our wallet and draw real change closer.

As with all medicine, chocolate is best when consumed in moderation. The theobromine content (that stimulates that in-love feeling) is a powerful stimulant and excessive amount puts strain on our adrenals and can cause nervous-type symptoms like insomnia, hyperactivity in children, moon swings and anxiety. Oxalic acid that is also present in cacao beans inhibits calcium absorption. Caspian -who will have to wait quite a while before having chocolate- can testify that only munching on the decorations for this bar is pretty satisfying too.

Big note: If you ate something you know is ”bad” this morning/right now/this week then always give yourself permission to start over with a treat like this. The mere act will rewire your brain and put you on a better track. Enjoy what’s good and feel good about it. It’s a Real Deal Raw Love Chocolate party under the full moon energies!

Real Deal Raw Love Chocolate

Making your own raw chocolate will take the same amount of time (or less) as you’d spend when choosing, picking up and paying for one at a store. For this recipe I’ve used coconut sugar as a sweetener but you could also use dates (as in this recipe) or simply sweeten with pure vanilla, berries and perhaps a drop of stevia. Your choice. Ps. Virgin coconut oil is amazing and all but cacao butter is divine. Time to up your game? Ps2. I’ve included Maca & Mesquite powder to enhance the love of this bar but it’s totally optional.

Makes a 4*4 inches square (1.5 inches thick) Chocolate bar

1/3 cup (60g) cacao butter or virgin coconut oil
7 tbsp | 35g | almost 1/2 cup | raw cacao powder
3 tbsp coconut sugar
1 1/2 tsp maca root powder
1 tsp mesquite powder
1/4 tsp pure ground vanilla bean
a generous pinch good quality salt like celtic sea salt or himalayan pink salt

1. In a double boiler or in a glass/metal/ceramic bowl over a pot of simmering water melt cacao butter/coconut oil. Remove from heat and add ground coconut sugar, raw cacao powder, maca powder, mesquite powder, good quality salt and vanilla, whisk to combine.
2. Line something square or rectangular (or why not circular?) that can work as a mold with plastic film. Pour chocolate mixture into the mold. Pop into the freezer for at least 10 minutes or until you feel like some Real Deal Raw Love Chocolate. Once decorated keep refridgerated.

Beautify using:

Pink Coconut Mousse
3 tbsp raw coconut butter
2 large strawberries
1/2 lime, the juice
a thumbnail chunk fresh ginger

1.Blend all ingredients using an immersion blender (or mash together with a fork)
2. Use a piping bag /regular plastic bag with a small hole to pipe out little ”bops” onto the chocolate 

And..
Frozen raspberries

Dried + fresh rose petals
Sea salt flakes
Raw cacao powder
Flakes/small chunks of raw chocolate from when cutting the edges
Drops of blended strawberries

    I had exactly the same reaction when pregnant! It was so surreal (being a total chocoholic usually!) I actually went off all sweet things (except for juicy tropical fruits ; ) until near the end of my pregnancy. Thankfully eating chocolate after birth was one of the first things I ate after stocking my freezer full of quick nutrient dense treats ; )
    Well, fabulous Fabian and ecstatic Elenore, you have done it again with your amazing recipe and gorrrrgeous photos! I am actually making some raw chocolate for fathers day tomorrow and may have to whip up some pink-mousse to go on top! Thank you.     Oh yummmmm! I was actually thinking the other day to step up and try to make my own chocolate as a gift for my special and new clients (Im just starting out as a holistic nutritionist). Superfoods and travel are a passion, so next year I will be volunteering on an organic cacao farm in Ecquador… can’t wait to learn from this experience, wooohooo!

    I love how well you express your love for REAL chocolate. It is such a beautiful gift.
    Make sure you check out Vosges chocolate when you’re in the US! It’s a company from Chicago and they have such AMAZING, out of this world flavor combinations… Curry chocolates, matcha green tea chocolate bars, ancho chili bars with 70% cacao… You can buy their bars at Whole Foods and they have stores in Chicago.
    I’ve been going to Vosges since I was 10 and it’s still just as amazing 14 years later.

    I love your website so much. I’ve been enthusiastically making raw chocolate until I did some research, and there are quite a few articles out there saying that it is in fact a toxic substance that can be quite bad for you. Do you know anything about this Elenore?
